Chef Greg Tefs specializes in applying classical French technique to a wide range of international ingredients, with a special emphasis on healthy and delightful fermented foods. As a long-time culinary educator, Chef Greg is happy to teach you how to make the perfect gnocchi, or to prepare it for you in a multi-course private meal – or perhaps both!
Chef Greg Tefs served as a Chef Instructor at CHIC (later Le Cordon Bleu Chicago) for over a decade, with additional semesters served at Robert Morris University and Kendall College. He received his culinary training in the grand French tradition at the Art Institute of Colorado. He considers himself ‘a loyal foot soldier of Escoffier.’
